Since going gluten-free and dairy-free, I’ve desperately missed enjoying a good slice of pizza. Like many busy moms, I found myself craving a quick solution for pizza night without the long wait times traditional recipes require. That’s when I decided to create this fresh-milled pizza dough recipe that delivers all the satisfaction of homemade pizza dough without the fuss.

Why This Recipe Works for Busy Families
Most gluten-free pizza crust recipes call for instant yeast or active dry yeast, which means waiting for the dough to rise. While yeast-based recipes have their place, sometimes you need dinner on the table fast. This easy recipe uses baking powder instead, cutting out the rise time completely. There’s no need to wait in a warm place for the yeast mixture to activate or watch the dough. You can have a crispy crust ready faster than delivery.
The best part? This recipe uses my gluten-free flour blend made with fresh-milled flour from my grain mill. Fresh flour offers incredible health benefits compared to store-bought options that have sat on grocery store shelves for months. However, if you don’t have your own flour blend, you can use Bob’s Red Mill gluten-free all-purpose flour or another store-bought blend. Just make sure it contains either xanthan gum or psyllium husk powder for proper binding.
What Makes This Different from Other Recipes
I’ve tested countless gluten-free baking recipes over the years, and this has become my go-to for several reasons. Unlike recipes that require multiple flours, starches, and complicated flour-mixture combinations, this uses a simple all-purpose gluten-free flour blend. The same blend I use successfully in cobblers, cookies, biscuits, and pasta works beautifully here too.
The texture is more like a traditional white-flour pizza crust than many gluten-free versions. It has that classic bread-like flavor and holds your favorite toppings without getting soggy. Whether you prefer a thin crust or something heartier, this dough delivers. Next time you’re planning pizza night, you’ll be satisfied with how this compares to wheat-based versions.

Ingredients You’ll Need
For the dry ingredients, you’ll need 240 grams (just over 2 cups) of gluten-free flour blend, 10 grams of baking powder (around 2 1/2 teaspoons), and 5 grams of salt (around 1 teaspoon). The wet ingredients include 168 grams of water (you can reduce to 112 grams depending on how absorbent your flour is), 1 large egg, and 25 grams of olive oil (about 2 tablespoons).
I recommend measuring in grams for the best gluten-free pizza crust results to ensure consistency every single time.
Step-by-Step Instructions
Start by combining your dry ingredients in a bowl and setting them aside. In the bowl of a stand mixer or large mixing bowl (I use the Bosch Universal Plus Mixer), combine the wet ingredients using the dough hook attachment or a wooden spoon. I found the cake batter paddles for my Bosch Universal Plus Mixer worked great for this pizza dough. You don’t need warm water for this recipe since there’s no yeast to activate.
Once the wet ingredients are combined, add in the dry flour mixture and mix until everything comes together into a soft dough. Here’s where this recipe gets interesting: instead of letting it rest at room temperature like traditional homemade pizza dough, place the mixer bowl in the refrigerator for 15 minutes. This allows the flour to fully hydrate, similar to an autolyze process used in bread making.
Meanwhile, preheat your oven to 425 degrees. Make sure it’s fully preheated before baking. While some recipes call for a pizza stone, baking stone, or pizza pan, I’ve found that cast iron skillets work perfectly for this recipe. An 8-9 inch skillet creates the ideal thickness.
Flour a pastry mat or clean surface, and turn your dough out onto it. Lightly coat the dough so it’s workable and less sticky. Then press the dough into your greased skillet with your hands; no rolling pin needed! Form the crust around the edges and poke the top of the dough a few times with a fork to prevent bubbling.
Baking Your Pizza
This recipe uses a par-baked crust method. Prebake the dough for 10-12 minutes until it’s light golden brown. This creates a sturdy base that won’t get soggy under your favorite pizza toppings.
Remove the partially baked crust from the preheated oven and add your toppings. I brush mine with a light coating of olive oil, then add homemade pizza sauce, Italian seasoning and garlic powder, Daiya mozzarella for dairy-free needs, turkey pepperoni, and vegetables. You could also experiment with different favorite toppings.
Return the fully topped pizza to the oven for 12-15 more minutes. The whole family will love the bubbly cheese and perfectly crispy crust.
Storage and Reheating Tips
The best thing about this recipe is how well it stores and reheats. Individual slices freeze perfectly in an airtight container with parchment paper between layers. When you’re ready to enjoy them, reheat in an air fryer at 400 degrees for 6 minutes. The result tastes as good as when you first made it, with that satisfying crispy texture.
You can also make extra crusts and freeze them after the par-baking stage. The Bosch Universal Plus Mixer’s large dough capacity makes it easy to double or triple this recipe. This gives you ready-to-top options for busy weeknights. Simply top and bake the frozen par-baked crust, adding a few extra minutes to the baking time.
Tips for Success
If this is your first time making gluten-free pizza or working with fresh-milled flour, don’t worry. This easy recipe is nearly foolproof. The type of flour you use matters, so stick with a quality blend. This recipe is tested with the Fresh Milled Gluten-Free Cup4Cup Flour Blend Recipe.
